A quick and easy lunchbox quesadilla recipe for weekday school lunches

Whether we were at home doing online schooling or as we are now, back in the classroom, the biggest challenge has been making healthy, quick and easy lunches. There was one point in all this madness with the pandemic when I pretty much became a catering service churning out breakfast, lunch and dinner (plus snacks) day after day to the entire family as my husband also had to work from home. Every meal just blended right into the next one! And if I wasn’t prepping the next meal, I was washing up or at the least always thinking about what to eat next.

Quesadillas have been a really easy go-to recipe for us and while they are easy to make for immediate consumption at home, they also travel really well when packed the night before in the lunchbox the next day. The ingredients are really easy and fillings can be changed up according to what is in your fridge or pantry.

In this recipe I used grated mozarella cheese but of course any good melting cheese can be substituted such as cheddar, parmesan or gruyere. If I only have a block of cheddar cheese, I’ll grate that on a whim. Avoid the higher moisture cheeses like buffalo mozzarella or ricotta.

When I buy a pack of tortillas, I always keep them in the freezer and they defrost easily to make these quesadillas whenever the need arises (which can be quite often these days!)

Top Tip:

Store leftover tortillas in the freezer and you will always be ready to make quesadillas! They’re so flat, they take up hardly any freezer real estate.

I have made a video of the most basic version that my kids adore but want to share other options for fillings that are equally successful.

Filling suggestions:

  • The breakfast quesadilla (as described in this post): Egg, ham and grated cheese
  • Vegetarian option: Omit ham
  • Vegan option: Omit the egg. Use plant-based grated cheese or I have made my own cheddar cheese from cashews.
  • Need more veggies? Add some canned corn kernels, sliced avocado, baby spinach or grated carrot
  • Needs to be more filling? Add refried beans
  • Needs more cheese? Add different types of cheese and have a quesadilla cheese party
  • Need more fibre? Choose a wholegrain or seeded tortilla and avoid the white stuff.
  • Can’t find tortillas? Use mountain bread or cut open a pita bread. Make your own tortillas!

The possibilities are endless but don’t go too crazy with wet ingredients or the filling will soak through or fall out. Be sensible folks!

How to make breakfast quesadillas

What you need:

  • 1 egg
  • Handful of grated cheese
  • 2 slices of ham: chopped or kept whole (if you can’t be bothered I get ya!)
  • 1 tortilla
  • A fry pan: preferably non-stick as you’re cooking eggs and that sort of pain nobody needs when making lunch.


  • Heat your fry pan over medium heat
  • Beat 1 egg
  • Fry the omelette in the pan. Note: If you don’t have a non-stick, you’ll have to oil the pan first.
  • Sprinkle on the grated cheese
  • Add the ham
  • When the cheese has melted a little, top with a tortilla and press it down to assist sticking between the cheese and tortilla
  • Flip the tortilla and toast the tortilla side
  • Fold the tortilla in half and toast both side to your liking
  • Transfer to a cutting board and slice into wedges
  • Serve while warm with some added salad, avocado slices for a midday meal OR
  • Allow to cool completely then pack in lunchbox, store in fridge for school the next day.

And that is it folks! A very easy and delicious lunchbox recipe that the kids (and grown ups) all love. Very little prep work and minimal washing up. Just one pan!
